Dexter Beef
Darlingrange Dexter beef is Tender and flavoursome. Grass fed on natural pasture without hormones, artificial fertilizer and pesticides.
The well marbled beef will retain its juicy texture even when cooked well done.
Unless otherwise ordered we grow out our beef for a minimum of 24 months to allow the full flavour to develop.
All sides of beef are hung 10 – 14 days after slaughter to attain maximum tenderness and flavour and can be packed to any requirement. Unlike supermarket beef Dexter Grass fed beef will often be much deeper red with more colour in the marbling.
A traditional side of Darlingrange Dexter beef is attributed in the following manner. Carcase weight range of 175 to 200kg. Whole beast per side approx 95kg you will get approximately the following:
- waste and bone 15-25kg
- trim cuts [mince and diced cuts] 20kg
- roast cuts 15kg
- casserole and braising steak 10kg
- prime steak cuts 15kg
- osso Bucco and sundry cuts [including tail and some BBQ Ribs] 5kg
- soup and dog bones 20kg
Packaged sides usually weigh 65kg not including excess bones. Alternatively we can sell whole animals at carcase price per KG and have delivered to your butcher for packing.
